In Lasithi, the local community has perfected the creation of delightful Cretan-style pasta dishes. At the heart of their expertise is the handcrafted skioufichta macaroons or Kritsa lasagna, which not only deliver a delicious taste but also display a visually appealing look. Expertly made, they are subsequently “seared” in hot butter, transforming into skioufichta. Garnished with an ample amount of grated myzithra (a hard goat or ewes milk cheese) or cream cheese, this pasta dish is really satisfying.

Besides the pasta, this region is known for a diverse range of traditional dishes, such as Setean kaltsounia, fava beans, water pies, rooster stew, and goat stew. As most of us are acquainted with these culinary delights, it’s worth drawing attention to the water pies, a recipe passed down through the generations. The name originates from the old method of using water rather than oil to shape the dough in the pan. Essentially a type of sourdough cake, their distinctive preparation sets them apart.

Then there is the much vaunted “Tiris of Dikti”. Sourced from the mountainous region of the Pediodos province on the Lassithi Plateau, this hard, salted cheese shares similarities with Kefalotyri and offers a powerful, spicy taste. After maturing and drying, it can be preserved in jars with olive oil, although it remains a rare find in commercial markets. The unmistakable flavor of Tiris of Dikti brings a sapid touch to any dish.
