Crete’s fertile and prosperous land is always an eternal source of inspiration, all the more so in this case: “The menu is a reflection of the Cretan terroir” explains Nikos Bakoulis. “It is divided into three main chapters. In the first chapter, Countryside & Landscapes, we have created cocktails based on ingredients grown at low altitude in Crete such as fruits and vegetables. In the second, Mountainous Space & Gorges, we have focused on ingredients that grow at high altitude, mainly herbs and wellness drinks. The third chapter is a combination of the first two but with wellness and healthy consumption as the common denominator.”

- 35 ml Rhum Agricole
- 15 ml Cretan cinnamon scented molasses
- 100 ml fluffy fresh apple juice
“Nearly 80% of our cocktail recipes are made with local ingredients and products.
