We had the chance to visit some of the city’s most renowned hotels and taste some of the delights from their restaurants, and we highly recommend five that stood out to us for their impressive flavors, impeccable service, and charming ambiance.

Ambrosia Restaurant, Hyatt Regency Thessaloniki

The Hyatt Regency Thessaloniki is located just a few minutes from Macedonia International Airport and about 16 kilometers from the center of Thessaloniki. Recently renovated, the hotel sits on a large, tree-lined property and features modern architecture, swimming pools, a spa, tennis courts, and gym facilities. It also dishes up a range of traditional and modern Greek cuisine at the Ambrosia Restaurant, which is known for its intense aromas and creative flavors. The restaurant’s courtyard with views of the pools and gardens, and the spacious main dining room features a modern décor with warm cherry wood accents and an open kitchen where guests can watch the chefs in action. The aroma of the cooking fills the space, adding to the ambiance.

The Ambrosia Restaurant is led by renowned executive chef Apostolos Altanis and his team, who create a menu featuring appetizers, salads, pasta, risotto, and main dishes featuring both land and sea ingredients. “Our raw materials are strictly of Greek origin. We place great emphasis on the local community and local producers, some of whom produce specific products exclusively for us,” says the chef. The Botargo Restaurant’s menu includes a refined and creative version of ossalade, a traditional monastic dish made with a blend of eight different pulses and updated with crunchy hazelnuts and sweet apricot and aromatic lemon oil. The restaurant also serves Athonite cod with carrots, crispy artichokes, puree of caramelized onions, and chlorophyll gel, as well as tender black pig cheeks with burnt leeks, chard broth, celery puree, and crispy celery leaves. The meal can be completed with a dessert called beata, made with bitter chocolate, red wine, fig, and tahini sauce, and is free of added sugar, lactose, and gluten. Salonica Restaurant & Bar, Makedonia Palace Hotel

The Salonika restaurant is located within the Macedonia Palace, a well-known hotel in Thessaloniki, Greece. The restaurant is situated in a modern space with a spacious hall and a courtyard surrounded by plants, and offers panoramic views of the bay of Thermaikos, the White Tower, and the city. The restaurant’s executive chef is Sotiris Evangelou and the head chef is Dimitris Tziovaras. The menu at Salonika features traditional Greek cuisine with creative touches, as well as international influences. The restaurant places a strong emphasis on sourcing fresh, high-quality ingredients from producers within a 100 km radius, whilst in the summer, the restaurant also uses produce from its own garden.

The restaurant’s menu changes at least four times a year to follow the seasons, and special seasonal dishes are often featured. In February, the restaurant may serve game such as quail, duck, and wild boar. Salonika Sunday lunch is popular, featuring traditional roasts and rooster stew, lamb on a spit, and boiled sheep with trahanas. The restaurant’s appetizers include a carpaccio with a balsamic caviar, lime, salt flower, microleaves, and olive oil and is serneved with warm, handmade bread rolls. The menu also includes an al dente spaghetti a La Vongole with crayfish tartare that is bursting with fresh sea aromas.

The Mount Athos eggplant salad, for example, retains its monastic smoky elements from the grilling of the eggplant and roasted pepper, while the addition of yoghurt with mint and walnut adds freshness. The mushroom pie from Grevena is made with traditional pastry, Grevena smoked cheese cream, and mushrooms from Pindos, and the dolmadakia feature egg lemon foam in place of traditional egg lemon sauce. The hunkiar beyedi is made with beef cheek and served with roasted eggplant cream made from chiffonade, which gives it a more airy texture. The seafood casserole is exuberant, with fresh shrimps and crayfish broth, and sweet notes are added by the Samian wine, while parmesan peel from Metsovo add intensity to the dish. For dessert, there’s the Thessaloniki semifreddo ‘armenoville’, a crispy meringue, almond crocan, and chocolate ganache pudding, as well as a deconstructed nougatina with caramelized almonds, Madagascar vanilla cream, and salted caramel. The restaurant’s wine list includes good choices from both Greek and international labels.
