The largest island of the Dodecanese offers countless options at all levels, from cosmopolitan beaches near the main town and deserted sandy beaches in the south to bustling nightlife in the Old Town and quiet evenings in the mountain villages. Same goes for the island’s gastronomic map, which features everything from fish taverns, Italian restaurants and chophouses, to street food and fine dining restaurants in the island’s major resorts. And while in the past hotel restaurants simply served the needs of their guests, in recent years they have significantly upgraded their menus, gaining glamour and prestige. Today, most of them are open to anyone who wishes to discover and enjoy their gastronomic treasures.

The menu is inspired by the local cuisine while incorporating ethnic elements and modern techniques. The result is premium flavours, such as pickled turnips with tomato textures and bottargo (cured fish roe, coated in beeswax), or shi drum fillet with locally-grown spinach, fennel and verbena.
